Sourced from more than 350 farmers living in the Yirgacheffe, Idido village. Who deliver to the Gizat washing station. The cherries undergo a washed process method where they are sorted into grades using density channels, fermented for 36-72 hours, washed to remove the mucilage and floated to find and remove defects. They are then dried naturally in the sun on raised drying tables for 8-15 days or until the desired moisture content is reached (11.5%).

The cherries are stored at a local warehouse and then further sorted by (colour, density, and screen size) and milled ready for export.
